Lasagna Soup
Ingredients
1 Yellow Onion, chopped
2 Cloves Garlic, minced
1 Pound Ground Beef
1 teaspoon Onion Powder
1 Tablespoon Garlic Powder
1 teaspoon Red Pepper Flakes
1 teaspoon Italian Seasoning, divided
1 teaspoon Pepper
1 teaspoon Salt
1 Small Can Tomato Paste
4 Cups Beef Broth
24 ounces Marinara Sauce
1 Cup Heavy Cream
Fresh Basil, to taste
Lasagna Noodles, broken into small pieces
8 ounces Ricotta Cheese
1/2 Cup Mozzarella Cheese
2 Tablespoons Parmesan Cheese
Parsley, for garnish
Directions
Chop the yellow onion and brown in a large pot with the minced garlic.
Add the ground beef and brown, breaking it up as it cooks.
Add the onion powder, garlic powder, red pepper flakes, italian seasoning, pepper, and salt.
Add the tomato paste and cook for a few minutes.
Add the beef broth, marinara, and heavy cream.
Add more of the same seasoning to taste, including fresh basil.
Bring to a boil.
Add the lasagna noodles broken into small pieces.
Boil according to the noodle package instructions.
In a small bowl, mix together the ricotta, mozzarella, and parmesan cheese.
Top each soup bowl with the cheese mixture and parsley before serving.
