Lasagna Soup

Ingredients

  • 1 Yellow Onion, chopped

  • 2 Cloves Garlic, minced

  • 1 Pound Ground Beef

  • 1 teaspoon Onion Powder

  • 1 Tablespoon Garlic Powder

  • 1 teaspoon Red Pepper Flakes

  • 1 teaspoon Italian Seasoning, divided

  • 1 teaspoon Pepper

  • 1 teaspoon Salt

  • 1 Small Can Tomato Paste

  • 4 Cups Beef Broth

  • 24 ounces Marinara Sauce

  • 1 Cup Heavy Cream

  • Fresh Basil, to taste

  • Lasagna Noodles, broken into small pieces

  • 8 ounces Ricotta Cheese

  • 1/2 Cup Mozzarella Cheese

  • 2 Tablespoons Parmesan Cheese

  • Parsley, for garnish

Directions

  • Chop the yellow onion and brown in a large pot with the minced garlic.

  • Add the ground beef and brown, breaking it up as it cooks.

  • Add the onion powder, garlic powder, red pepper flakes, italian seasoning, pepper, and salt.

  • Add the tomato paste and cook for a few minutes.

  • Add the beef broth, marinara, and heavy cream.

  • Add more of the same seasoning to taste, including fresh basil.

  • Bring to a boil.

  • Add the lasagna noodles broken into small pieces.

  • Boil according to the noodle package instructions.

  • In a small bowl, mix together the ricotta, mozzarella, and parmesan cheese.

  • Top each soup bowl with the cheese mixture and parsley before serving.
